Good morning all my homemakers and cozy fanatics!
This morning I am taking it slow. So far I have gotten out of bed, fed the dogs, gave them each their medications, made and just about drank all of my “coffee” spent my quiet time with the Lord, and here I am! In all of my glory. 🙂
I say “coffee” because I am taking a break from traditional coffee grounds and am using my faux recipe which is just as warm and cozy and I can have one, two, or heck even 10 cups if I wanted to without feeling guilty. Anyway, more on my “coffee” another day.
For today, let’s talk a little about homemaking. Each week I sit down, with my warm beverage of choice, and make some goals for the week. This week I really want to stock some scratch items in the freezer.
The other night I made the most DELICIOUS chicken and dumplings and made it completely gluten-free by using GF cream of chicken and mushroom that I picked up at Walmart and for the biscuits, I used gluten-free Bisquick. It turned out so fabulous that I want to try making it even healthier by making my own homemade gluten-free and dairy-free cream of mushroom and chicken soups and stockpiling them in the freezer.
Now that the fall weather is here, I don’t know about you, but something about a warm and creamy dinner makes me so cozy inside. While having the prepared canned gluten-free cream soups was wonderful and so easy to put together that delicious meal, the canned version contains whey protein concentrate, soy, yeast extract, and natural flavor which no one knows what that even is. So, my goal for this week is to master a recipe for the most delicious cream of mushroom and chicken soups that I can have on hand for whenever I feel the need for a comfort food meal for my family that I feel no guilt serving us.
I’ll let you know how that goes and share any recipe I use that gets rave reviews around here. Aside from that, I’d like to try my hand at making some hummus. I’ve never tried it before and I’ve really been enjoying having it lately. I make up a delicious veggie pita with these GF pitas I got at Costco a few weeks ago. I just popped them in the freezer so they will stay fresh and throw them in the air fryer for about 2-3 minutes when I am ready to use them. I fill them with spring mix, cucumber, coleslaw mix, hummus, kalamata olives, and some onion and they are delicious as an afternoon snack. I’ll keep you posted on the hummus recipe if I find a good one.
Just looked at the clock and it’s time to go get my little guy up and get breakfast started so we can start our school day.
